ASPARAGUS SALAD

THE SUPPER SWAP GIRLS

Ingredients

1 bundle of Asparagus
Balsamic Vinegarette
3/4 cup of Chopped Tomato
3/4 cup of Crumbled Blue Cheese
Fresh Ground Pepper

Instructions

Blanch your asparagus until just cooked. Immediately rinse in cold water to stop cooking. Place in fridge for 1 hour to cool completely.

Toss asparagus with salad dressing until coated. Place on a platter and top with tomato on one side vertically and blue cheese on the other. Garnish with fresh cracked black pepper. Enjoy!
