Ingredients
Makes: 8 sandwiches
1/4 cup seedless blackberry jam
2 Tablespoons balsamic vinegar
1 Tablespoon olive oil
2 teaspoons prepared horseradish
1/2 teaspoon coarse salt
1/4 teaspoon ground black pepper
1/4 cup pecan halves, chopped
3-4 cups packaged Spring Mix lettuce leaves
4 (10-inch) flour tortillas or sandwich wraps
1 lb. deli roast beef, thinly sliced
2/3 cup goat cheese, crumbled
1/2 cup red onion, thinly sliced
8 slices ready-to-serve bacon, crisped and chopped
Instructions
To prepare Blackberry-Horseradish Vinaigrette: In a small bowl or liquid measuring cup, whisk together blackberry jam, balsamic vinegar, olive oil, horseradish, salt, and pepper. Stir in chopped pecans.
Place an equal amount of lettuce leaves down the center of each tortilla. Divide and top lettuce with sliced roast beef, crumbled goat cheese, red onion, and bacon. Spoon over evenly with Blackberry-Horseradish Vinaigrette. Fold sides of wraps up and over filling; roll up tightly. Cut each wrap in half, making 8 half-wraps. Enjoy!
