Ingredients
2 Tablespoons key lime juice
2 Tablespoons honey
1 Tablespoon extra virgin olive oil
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 cup fresh cilantro, chopped
2 cups brown rice, cooked and cooled
1 (15-oz.) can black beans, rinsed and drained
1 cup fresh pineapple, cored and chopped
1/3 cup roasted red or tri-colored peppers, chopped
1/4 cup onion, thinly sliced
Instructions
To prepare dressing: In the bottom of a large bowl, whisk together key lime juice, honey, olive oil, salt, and cinnamon. Stir in cilantro.
Add brown rice, black beans, pineapple, red pepper, and onion to dressing; toss to coat. Serve immediately or chill until ready to serve. Makes 6-8 servings. Enjoy!
