Carolina Watermelon Salad

Ingredients

1/2 watermelon cubed
3 ripe peaches, chunked
1 large heirloom tomato, cubed
1/2 sweet onion, sliced thin
4-5 large basil leaves, cut with scissors Olive Oil Balsamic Vinegar S&P to taste

Instructions

Soak onion in water for 30 minutes to take out the sting, drain.

Salt and drain tomato for 30 minutes and drain.

Mix cold watermelon, room temp tomato, peaches, onion, basil together. Splash and olive oil and vinegar, stir. Dust with salt and pepper. Serve immediately. Enjoy!
