Ingredients
2+1/2 cups baking mix
1 cup shredded cheddar cheese, divided
1/4 teaspoon ground black pepper
1 cup puréed pumpkin (not pumpkin pie filling)
1/2 cup milk
1/4 cup butter, melted
1/4 cup pickled jalapenos, chopped
3 Tablespoons roasted, salted pepitas (pumpkin seeds)
Instructions
Preheat oven to 400 degrees F. Line 2 baking sheets with parchment paper.
Combine baking mix, 3/4 cup cheddar cheese, and black pepper in a large bowl. Stir in pumpkin purée, milk, melted butter, and chopped jalapenos. Divide and scoop mixture out onto baking sheets, leaving about 2 inches between each biscuit. Divide and top biscuits evenly with remaining 1/4 cup cheddar cheese and pepitas, flattening biscuits slightly as you go.
Bake at 400 degrees F for 12-15 minutes. Serve warm with extra butter. Enjoy!
