Ingredients
Makes: 12-18 muffins
Ingredients:
2+1/2 cups baking mix (like Bisquick)
1/2 cup granulated sugar
1/4 cup dark cocoa powder
1/2 teaspoon ground cinnamon
2 eggs, beaten
3 Tablespoons butter, melted
1 cup Irish stout (or other dark beer)
2/3 cup dried tart cherries, very coarsely chopped
Instructions
Preheat oven to 375 degrees F. Line muffin tins with paper liners.
In large bowl, combine baking mix, sugar, cocoa powder, and cinnamon. Stir in eggs, butter, and stout; blend well. Fold in cherries.
Divide batter evenly among muffin liners. Bake at 375 degrees F for 18-22 minutes, or until a toothpick inserted into the center of the muffins comes out clean. Serve warm with butter! Enjoy!
**Cook’s tip: To keep cherries from sinking to bottom of muffins during baking, toss them in small amount of baking mix before folding into batter.
