Ingredients
3 Tablespoons extra virgin olive oil
2 Tablespoons rice wine vinegar
2 Tablespoons honey
2 teaspoons ginger, freshly grated
1 teaspoon garlic, minced
1/2 teaspoon kosher salt
2 - 3 cups cooked rice, cooled
1 cup cooked edamame, shelled and cooled
1 (11-oz.) can mandarin orange segments, drained
1/3 cup roasted red pepper, chopped
1/4 cup green onion tops, thinly sliced
Instructions
1. In bottom of a large bowl, whisk together olive oil, vinegar, honey, ginger, garlic, and salt. Add rice, edamame, orange segments, red pepper, and green onions; toss well to coat and combine flavors (may also add cooked chicken or shrimp, if heartier salad is desired).
2. Cover salad and chill until ready to serve. Serves 4-6.
