Ingredients
1 cup mayonnaise
½ pound drained, crumbled feta cheese
½ cup sour cream
4 ounces cream cheese, room temperature
8 to 10 pepperoncini peppers, stems removed, chopped
5 to 6 garlic cloves, minced
3 tablespoons drained capers
4 tablespoons fresh oregano or 2 teaspoons dried (can use dill or thyme)
1 to 2 teaspoons Tabasco, to taste
2 tablespoons fresh lemon juice
Freshly ground black pepper, to taste
Instructions
Place mayonnaise, feta cheese, sour cream, cream cheese, peppers, garlic, capers, oregano, Tabasco, lemon juice and pepper in the bowl of a food processor. Process about 1 minute, until all the ingredients are thoroughly mixed. Note: the mixture will not be completely smooth because of the feta. Refrigerate in a container until ready to use or up to 1 week. Serve with chips or crackers.
Makes 3 cups.
