Quick Autumn Couscous

Ingredients

Makes: 4-6 servings

1 Tablespoon olive oil

1 cup matchstick carrots

1/2 cup onion, chopped

2 cups apple cider

1 cup dried, sweetened cranberries

1/2 teaspoon salt

1 (10-oz.) box plain couscous mix

1 large granny smith apple, cored and diced

1/2 cup pecan halves, toasted and coarsely chopped

Instructions

Preheat olive oil in a large saucepan over medium heat.  Add carrots and onions; cook, stirring regularly, for 3-5 minutes just until vegetables are tender.  Add apple cider, cranberries, and salt to saucepan; stir well.  Bring mixture just to a boil.  Remove from heat, stir in couscous, cover, and let stand for 5 minutes.  Stir in apples and pecans.  Serve warm or cover and refrigerate until ready to serve.  Makes 4-6 servings.
