The Supper Swap Girls
Ingredients
1 Cuke peeled, seeded and chopped
1/2 jar of Roasted Red Peppers, chopped
1 Local Tomato, chopped
1 teaspoon of chopped fresh basil
1/2 tub of Crumbled Blue Cheese
1 teaspoon of Mayo
Paprika to taste
Blue Corn Chips
Instructions
In a clear glass bowl mix chopped cucumber and mayo together and pat in the bottom. Using a clean paper towel wipe the side of the bowl clean. On your cutting board mix chopped roasted red peppers, chopped tomato and basil together. Spoon into the bowl on top of the white cucumbers. Top with crumbled blue cheese and dash a bit of paprika on top. Serve with blue corn chips.
