The Supper Swap Girls
Ingredients
1 bag of Spinach Leaves
1 cup fresh Blueberries
½ cup Goat Cheese, crumbled
Strawberry Vinaigrette
1 cup Strawberries
1 tablespoon Sugar
½ cup Balsamic Vinegar
¼ olive oil
Instructions
Coarsely chop the strawberries and sprinkle them with sugar. Set aside while assembling the salad. Wash and dry the spinach. Add it to
a large salad bowl and add the blueberries on top. Sprinkle the goat cheese on top.
Take the macerated strawberries and blend them in a mini prep along with the vinegar, olive oil and fresh pepper. Pour over salad.
