KIM NELSON, DAISY CAKES
Ingredients
1…cup butter, (2 sticks) room temperature
2…cups sugar
4…eggs
3…cups + 6 Tablespoons Cake Flour
1…teaspoon salt
1…teaspoon baking powder
1/2 teaspoon baking soda
2…teaspoons vanilla extract
1…cup buttermilk
Sauce:
1…cup sugar
1/4 cup water
1…stick butter
2…teaspoons vanilla extract
Instructions
Preheat oven 325 degrees
Grease and flour a 10-tube pan. Sift together cake flour, salt, baking powder and baking soda. Set aside. In a large mixin bowl, cream 2 sticks butter. Add sugar and continue creaming until light and fluffy….about 10-12 minutes. Add eggs. Beat well. Scrape down sides and bottom of mixing bowl. Add sifted dry ingredients along with vanilla and buttermilk. Blend at low speed until combined. Scrape down sides and bottom of bowl. Continue to beat at higher speed for 2 minutes. Pour batter into tube pan. Bake for 55-60 minutes or until tester comes out clean.
Sauce:
Just before cake is ready to come out of the oven, prepare sauce. In a small sauce pan, add sugar, water and butter. Whisk until butter is melted and sugar is dissolved. Remove from heat and add vanilla extract.
When the cake comes out of the oven, CW all over the top of the cake with a long skewer. DO NOT TAKE THE CAKE OUT OF THE TUBE PAN! Pour the warm sauce over the cake and allow to cool about 20-30 minutes. Turn out onto cake plate and serve.
**HOW TO USE THE LEMON CURD:
Chill mixing bowl and mixing whisk…in freezer for 15 minutes. Remove from freezer and immediately add 1 cup heavy cream and 1/4 cup sugar. Turn on high speed and whip until soft peaks form. Fold in 8 ounces of Luscious Lemon Curd.
Put into individual dessert dishes and top w/ fresh berries…blueberries, strawberries or blackberries.
Also, you can put into small pastry cups and top w/ one or two berries in each tart.
Also;
Luscious Lemon curd is delicious on a buttered and toasted English Muffin.
Spread a little on a ginger snap or short bread cookie.
Delicious over vanilla ice cream after warming a little in the microwave.
Great with Angel Food Cake.
