The Supper Swap Girls
Ingredients
1/2 carton of grape tomato
1 sm bunch of cilantro
1/2 bunch of green onion tops
1/2 yellow bell pepper, cut into chunks
4 basil leaves
Lime juice to taste
Salt to taste
Hot sauce to taste (we used Sriracha brand)
1/2 bunch of asparagus
Splash of olive oil
Instructions
Roast your asparagus under the broiler for 4 minutes with a bit of olive oil. Immediately blanch in cold water and cut into nibs.
In a blender add tomato, cilantro, bell pepper, basil, green onion, and lime juice. Pulse for 10-12 seconds. Add salt and pulse for 2 seconds to incorporate. Pour into a bowl and stir in the chopped asparagus. Serve this with chips or even on top of salmon- yum!
