The Supper Swap Girls
Ingredients
1 can of Premium Lump Crab Meat 16 oz (I buy mine at Costco)
1/3 cup Mayo
2/3 can Coconut Milk
2-3 teaspoons of Corriander Chutney (buy it at Pita House in their grocery section for less than $4)
1-2 T Lime Juice
Couple squirts of Hot Sauce of your choice (I like Sriracha) Plantain Chips
Instructions
Mix mayo and coconut milk together with a fork making sure to get about half of the solidified coconut from the can. Stir in the corriander chutney and lime juice. Taste before you adjust the amount of lime juice and add hot sauce to spice it up. Fold in the crab meat and refrigerate for at least 4 hours (overnight is best). Serve with plantain chips. The dip is on the salty side (crab is naturally salty as is mayo and the corriander chutney), so if you want to use a cracker or chip, use an unsalted one. Sliced apples or bell pepper is great with it too!
